FRIDAY!!!!!!!

Woo hoo, my favorite work day of the week. I am being so lazy tonight.

Breakfast was: Banana Acai Oatmeal.

- 1/2 cup Nature' Path Oatmeal
- package Funky Money Banana Acai
- 2 whipped egg whites



Workout:
My workout was blah. I just wasn't feeling it. I ran 4 miles and lifted legs.

I made a Sunshine Burger, Zucchini, Cheese and Tomato Melt for lunch:

- Sunshine Burger
- sliced tomato
- zucchini
- Next Generation Cheese



Snacks included a chocolate cherry lara bar and a small bag of Food Should Taste Good Olive Chips.



I also made a Salad with Quorn chik'n and Arnold's thin bread.



I also had a huge fruit bowl with blueberries, strawberries, raspberries, pineapple and honeydew melon from work.

Dinner was my usual: Stir-fry veggies with peanut butter. Shocking, I know.

- veggies: carrots, cabbage, broccoli
- 2 tablespoons krema products peanut butter
- teriyaki sauce



Snack will be a frozen banana. My favorite!

Week's Half Over!!

Whew, the week's halfway over and I am so excited. Today was a bit of a tough day. The weekend could not come any quicker.

Breakfast was Cinnamon Pear Granola with whipped egg whites

- 1/2 cup Nature's Path Oatmeal
- 30 grams dried pears
- cinnamon
- stevia
- 2 egg whites, whipped

I put all the items in a bowl and let sit overnight. In the morning, I cooked the oats. Meanwhile, I whipped the egg whites, folded into the oats and cooked a bit more.



WORKOUT
My workout was good. I ran 4.30 miles and lifted weights.

Meal 2 was stir-fried Zucchini, Sunshine Burger and Cheese
- zucchini
- sunshine burger
- next generation dairy cheese
- Don Sabrosa Salsa
- Benson's Seasoning



Meal 3 was Pasta, Zucchini and Cheese

- 2 oz fiber gourmet pasta
- zucchini
- Next Generation Dairy Cheese
- Don Sabrosa salsa




Snacks were a raw crunch bar and a lara bar.



And dinner was courtesy of my two faces: Quorn naked chik'n cutlets and krema products peanut butter.

- Quorn Chik'n Cutlet
- tablespoon krema products peanut butter
- teriyaki sauce
- veggies: cabbage, broccoli, carrots

Radish Hash Browns with Sunshine Burger

Note: you can make these "hash browns" plain or add some type of meat to add protein. I decided to add chopped sunshine burger.

Ingredients:
- 1/2 onion, diced
- large serving of radishes, cut and diced
- seasonings: I used Benson's all natural chicken, but you can use whatever spices you want
- 1/2 tablespoon olive oil
- sunshine burger, chopped

Directions: saute onions in oil until soft. Then add radishes and seasonings. Remove from heat and mix in diced sunshine burger.

Sunshine Burger Salsa Turnips

Note: and the return of the turnip :)

Ingredients:
- Sunshine Burger Garden Herb Burgers
- 1/2 turnip
- salsa
- Benson's Gourmet salt substitute seasoning

Directions: cut and boil turnip chunks. Remove from heat and sprinkle with Benson's. Add choppped burgers and salasa.

Sunshine Burger and Egg White Stir Fry

Note: This was a yummy stirfry for you vegetarians out there. Thanks to sunshine burgers for sending me coupons to sample their burgers.

Ingredients:
- sunshine burger
- green pepper
- onion
- salsa
- tomato
- egg white
- seasonings: I used Benson's all natural seasoning (salt substitute)

Directions: cook onion and green pepper with salsa. Add diced tomato and cook until soft. Add in chopped burger and egg white. Top with seasonings.

Sunshine Falafel Salad

Note: Thanks to Sunshine Burger, I got to make a salad topped with Falafel burger.

Ingredients:
- salad stuff (lettuce, tomato, green peppers, carrots, cucumbers)
- Sunshine Falafel burger Patty
- salsa
- dressing: balsamic vinegar, mustard, truvia

Directions: make salad. Top with chopped falafel burger, salsa and salad dressing.

Sunshine Burger and Salsa Zucchini Stir Fry

Note: Thank you to Sunshine Burger for sending me coupons to sample their burgers. I had some zucchini's I needed to use up today, so I made a simple spicy stirfry.

Sunshine Burgers:
I Love sunshine burgers because they are organic. One patty has only 230 calories. There are 10 grams carbs and one 1 gram sugar! In addition, there are no trans fats.

Pure and Simple Ingredients:
- Ground Raw Sunflower Seeds
- Farm Fresh Grains and Produce
- Sea Salt

Ingredients:
- Zucchini
- sunshine burger ( I used Sunshine Falafel, but any veggie burger would do)
- salsa
- Spices (I used benson's gourmet all natural salt substitute)

Directions: Cut zucchini in rounds and burger into small bite sized pieces. Cook with spices on non-stick skillet. Remove from heat. Mix in salsa and burger.

Sunshine Veggie Burger Stirfry

Note: Using the yummy veggie Burgers sunshine burgers sent me, I made a pepper, tomato and onion stifry.

Ingredients:
- one Sunshine veggie Burger
- small yellow pepper
- small onion
- small tomato

Directions: Sautee onion in pan. Add pepper. Then tomatoes. Once cooked, top with chopped pieces of the veggie burger.

Sunshine Burgers (Product Review)

Note: Thanks to Sunshine Burgers for sending me coupons to sample their burgers. These burgers are all natural and vegan. However, unlike a lot of veggie burgers out there, the base for these are sunflower seeds. In addition, they have no soy or wheat. These burgers are a great addition to stirfries, salads, soups or plain!

Sunshine Burger Stuffed Pepper
Ingredients:
- sunshine burger
- tomato
- cabbage
- salsa
- pepper
Directions: hollow out pepper. Put in oven at 35 for 10 minutes. Meanwhile, cook veggies in salsa on non-stick skillet. Add burger. Once cooked through, stuff the mixture in the yellow pepper and bake for another 15-20 minutes.
