Salads topped with roasted veggies

I always have salads for lunch. People kind of know me for it at work and poke fun at me about it :) They're just jealous their lunches are not as good as mine :)

For the base of my salads I used chopped up green and red cabbage. And then I top with a protein (usually chicken or turkey).

I make my own dressing.

- 1 tablespoon extra virgin olive oil
- balsamic vinegar
- mustard
- packet splenda
- herbs and spices
(mix- although it won't since oil doesn't mix) and drizzle on top.
