Peanut Butter Protein Fudge and Pudding

I had peanut butter/casein combo twice today.... here are two delicious recipes:

"Protein fudge"- mix one scoop casein protein powder and mix with just enough water to dissolve protein powder. top with one tablespoon crunchy pb.

all mixed in.... not the prettiest, but it tastes good :)

"Protein Pudding"- mix one scoop casein powder with water and one tablespoon natural peanut butter. I added a teaspoon of xantham gum, which thickened it like a pudding.

Low carb "protein" ice cream

Tonight I was in a peanut butter mood.... I had some roasted veggies (the usual, red and green cabbage and broccoli)... cooked soy sauce and topped with peanut butter....

And for dessert- Low carb "protein ice cream"- one scoop protein powder mixed with a 1/4 cup water and frozen.... let it sit out for 10 minutes and topped with peanut butter.....

Coconut Chicken and Veggies

Tonight's dinner: I cooked some veggies (green and red cabbage), added some chicken and topped with homemade coconut butter (which was more like a sauce) because of the heat from the veggies. mix it all and enjoy :)

High Protein Coconut Cake (low carb!)

This is like the protein cake but I mixed a tablespoon of homemade coconut butter in the mix...

High Protein Coconut Ice Cream (low carb)

3 Ingredients: simple and quick

1.) 1 scoop protein powder
2.) ~1/4 cup water
3.) tablespoon homemade coconut butter

Directions: blend in bullet and freeze. reheat in microwave for 15 seconds before eating.

One of my quick, easy to make snacks today: chicken topped with homemade coconut butter... soo good.


Two of my snacks today:

1.) container of greek yogurt with protein cake (I mixed cinnamon and a packet of splenda) and crushed the protein cake in the yogurt.

2.) protein cake topped with homemade coconut butter

Protein cake

mix scoop protein powder (I use dymatize) with enough water to mix all powder in a small tupperware container. Microwave on high for one minute.

Trader Joe's finds...

I went to trader Joe's last night. I haven't been here for a while and I somehow forgot how awesome this store is. I didn't buy much since I am travelling for work next week:

- Greek yogurt

- raw almonds

- frozen broccoli

- crunchy peanut butter

Yep, enough to last me the week :)

Salads topped with roasted veggies

I always have salads for lunch. People kind of know me for it at work and poke fun at me about it :) They're just jealous their lunches are not as good as mine :)

For the base of my salads I used chopped up green and red cabbage. And then I top with a protein (usually chicken or turkey).

I make my own dressing.

- 1 tablespoon extra virgin olive oil
- balsamic vinegar
- mustard
- packet splenda
- herbs and spices
(mix- although it won't since oil doesn't mix) and drizzle on top.

Kale chips topped with egg

Tonight's dinner included kale chips (pieces of washed kale baked in oven at 200 for 5-10 minutes) topped with 2 eggs, salt and frank's red hot sauce.

Homemade Coconut Butter and Coconut Almond Butter

Homemade coconut butter

I have seen this recipe floating arounds the blogs. It's easy to make and all you need is one ingredient: no sugar added coconut flakes. (and a blender of course). Throw it all in a blender and mix. Easy.

Homeade almond coconut nutbutter
Two ingredients:
1.) Almonds (I used raw, unsalted almonds)
2.) spoonful of coconut butter

Directions: put almonds in the over at 200 for about 5-10 minutes. then throw it in a blender with a spoonful of coconut butter.

OK, so after taking another long hiatus from blogging, I am realizing how much I am missing it. I still read/follow other people's blogs, but due to work and other interests, I put other priorities first... I'm still in my "busy" season for work, but things are less hectic.

Firt off....... It was my sisters birthday so we went to mine (I mean, hers!) favorite restaurant, Minados, in Natick Mass. It's sushi buffet, but the sushi is high quality. (if you're from the Mass area, check them out ---> Awesome service, waiters/waitresses are nice and good food :)

Round 2 (I polished most of it)... but the sushi won.

After my sisters lunch, we were off to BJ's to get some necessities... I got the following goodies...

cooking spray and exra virgin olive oil....

mustard and franks red hot sauce (I put that sh*t on everything...)

Eggs (36 pack).... a few days have passed and I am wishing I got two....

and the ginormous bag of frozen raw chicken breasts (10 pound bag!) Holy chicken....
