Zucchini/ Summer Squash "pad thai"

Note: This was one of my faves so far. I love my new spiralizer... thanks Mom :)

-peeled zucchini and summer squash
- 1/4 cup peant flour
- tablespoon peanut butter
- soy sauce
- salt
- ginger

Directions: Peel and spiralize zucchini/summer squash. Add salt and squeeze dry. Mix in peanut flour and peanut butter. top with soy sauce and ginger and mix in.
