"Cheesy" Zucchini Coconut muffins

Note: This tasted 100 times better than it looks.... promise :)

Ingredients:
- Shredded zucchini
- 2 tablespoons coconut flour
- 1/4 - 1/2 cup egg whites
- 1 oz Follow Your Heart vegan Cheddar cheese alternative, cubed

Directions: mix all ingredients together in small tupperware. Microwave until cooked.
