Low Carb Coconut Curry

This is a filling dinner.... It's low carb because it uses chopped up cauliflower as the "rice."

- 1 tablespoon coconut oil
- 1 head of cauliflower
- curry powder

- 1 tablespoon peanut butter

- salt and pepper

- coconut shreds (optional)

Directions: chop up cauliflower and cook in coconut oil/curry powder until soft. Once cooked, add peanut butter on top and mix. Top with coconut shreds...
