FRIDAY!!!!!!!

Woo hoo, my favorite work day of the week. I am being so lazy tonight.

Breakfast was: Banana Acai Oatmeal.

- 1/2 cup Nature' Path Oatmeal
- package Funky Money Banana Acai
- 2 whipped egg whites



Workout:
My workout was blah. I just wasn't feeling it. I ran 4 miles and lifted legs.

I made a Sunshine Burger, Zucchini, Cheese and Tomato Melt for lunch:

- Sunshine Burger
- sliced tomato
- zucchini
- Next Generation Cheese



Snacks included a chocolate cherry lara bar and a small bag of Food Should Taste Good Olive Chips.



I also made a Salad with Quorn chik'n and Arnold's thin bread.



I also had a huge fruit bowl with blueberries, strawberries, raspberries, pineapple and honeydew melon from work.

Dinner was my usual: Stir-fry veggies with peanut butter. Shocking, I know.

- veggies: carrots, cabbage, broccoli
- 2 tablespoons krema products peanut butter
- teriyaki sauce



Snack will be a frozen banana. My favorite!

Thursday Recap

Hey all,

Hope everyone's week is going well. Tomorrow is Friday!!

Breakfast was the same as yesterday: Cinnamon Pear yogurt with whipped egg whites:
- 1/2 cup Nature's Path Oatmeal
- 30 grams dried pears
- cinnamon
- stevia
- 2 egg whites, whipped

I put all the items in a bowl and let sit overnight. In the morning, I cooked the oats. Meanwhile, I whipped the egg whites, folded into the oats and cooked a bit more.



Workout:
- ran 4.30 miles
- lifted weights (upper body)

I had a Quorn Chick'n Cutlet Sandwich on Arnold's Thin for lunch.



Snacks were somersault cookies and a lar bar- peanut butter and jelly- my favorite flavor!



My snack was Chick'n Zucchini and PB Stirfry
- Quorn Chick'n tenders
- zucchini
- Krema products peanut butter
- soy sauce



At work, they also had some fruit, so I had a bowl of blueberries, grapes, pineapple, blackberries and strawberries.

Dinner was Chick'n and Peanut Butter Stir Fry:
- Quorn Chick'n tenders
- Krema products peanut butter

- veggies: cabbage, carrots, onion
- teriyaki sauce





Snack was a Frozen banana

Quorn Products (Product Review)

Thank you to Quorn for sending me the following meatless products to test. As you might remember before, I tried their turk'y burgers and loved them. Although I am noy vegeterian, these are a great, high protein alternative to chicken.

Week's Half Over!!

Whew, the week's halfway over and I am so excited. Today was a bit of a tough day. The weekend could not come any quicker.

Breakfast was Cinnamon Pear Granola with whipped egg whites

- 2 egg whites, whipped

WORKOUT
My workout was good. I ran 4.30 miles and lifted weights.

Meal 2 was stir-fried Zucchini, Sunshine Burger and Cheese

- Don Sabrosa Salsa
- Benson's Seasoning



Meal 3 was Pasta, Zucchini and Cheese

- 2 oz fiber gourmet pasta
- zucchini
- Next Generation Dairy Cheese
- Don Sabrosa salsa




Snacks were a raw crunch bar and a lara bar.



And dinner was courtesy of my two faces: Quorn naked chik'n cutlets and krema products peanut butter.

- veggies: cabbage, broccoli, carrots

Back to work!

Hello everyone, I am back to 100%! I feel awesome!!! I hate being sick, especially when it involves an upset stomach and I can't eat.

Honestly, my mind definitely was not with it either when it came to meal planning either. I was in no mood to cook last night. I had my last tub of Daisy Cottage Cheese that I needed to finish off soon so I made a bunch of cottage cheese recipes. I will be back on track tomorrow.

Breakfast was Apple Cinnamon Cottage Cheese and Oats:

- 1/2 cup Nature's Path Oats
- 1/2 cup Daisy Cottage Cheese Align Left
- Apple
- cinnamon
- stevia

I let the cottage cheese, stevia, oats and cinnamon sit overnight in fridge. Added chopped apple in the morning.



WORKOUT TIME!
- ran for 40 minutes on the treadmill (about 4.10 miles)
- lifted arms for the first time in 4 days!!!!!! My arms felt ok. I lifted a lot, but they felt like jello. I guess that's what four days off in a row can do to you.

POST WORKOUT MEAL: Cinnamon Cottage Cheese and Bananas

- 1/2 cup Daisy cottage cheese
- cinnamon
- stevia
- banana



Next was Peanut Butter and Cottage Cheese

- 1/2 cup Daisy Cottage Cheese
- 1 tablespoon krema products peanut butter
- stevia

OK, so I COMPLETELY miscounted my meals last night when I was planning for today. As I was leaving for work, I grabbed a bag of these Tings from Pirate's Booty that I have been meaning to try. These were awesomely delicious! One bag has 320 calories, 18 grams fat, 32 grams carbs, 0 grams sugar, 2 grams protein.

Next was Chocolate Peanut Butter and Cottage Cheese

- 1/2 cup Daisy Cottage Cheese
- 1 teaspoon cocoa powder
- 1 tablespoon krema products peanut butter
- stevia



When I got home from work I snacked on a Dr. Kracker Cracker while I cooked dinner.

And dinner was the usual :) Stir-Fry Teriyaki Veggies with Krema Products Peanut Butter.


- veggies (red and green cabbage, broccoli, carrots and onion)
- kikkoman teriyaki sauce
- 2 tablespoons Krema Products Crunchy Peanut butter




Dessert was a FROZEN BANANA!

I am now watching MY FAVORITE TV SHOW: Law and Order: SVU. I am off to do some cooking, call my sister and doing some texting and blogging. Hope everyone is having a good night!

I feel like a (new) woman!!!

Wow, what a difference a day makes. I feel soooo much better. I actually started feeling better after breakfast. Unfortunately, the boyfriend is still very sick :( His symptoms are a lot worse than mine. We both ended up having to take the day off work. I am all set to go back tomorrow, but I am not sure if he is going to. I have a doc's appointment in the afternoon. Luckily, I called my doctor today and she said she is convinced I have the stomach flu after I told her my symptoms.

However, no gym today :( I KNOW I needed the rest, but I just hate skipping the gym.

Anyways, so after my 13 hours of sleep (which is like 3 nights of sleep for me), I woke up starving. I had 2 slices of Arnold Double Protein Bread with 1 tablespoon krema products peanut butter.

(Well, I started off with one slice of bread with 1 tablespoon peanut butter... but got hungry and ate another slice later.)


Immediately after breakfast, I felt 100% better and felt so relieved.

I roasted my kabocha squash that I bought yesterday.

- I topped the first 1/2 with 2 tablespoons krema products peanut butter.

I then roasted topped the second half (with a roasted carrot) with one tablespoon krema products almond butter and one tablespoon krema products cashew butter.


After calling the doc this afternoon, I told her what I was eating and she said that I should eat soups for the rest of the afternoon since I could be dehydrated. I never know what to eat when I am sick.
I had some Progresso Soup Chicken Barley Soup in my measureup bowl. Not sure if you can tell by the lines on the bowl, but it measured exactly 2 cups, as the bowl said it was.


I was still hungry around 5, so I decided to have another bowl of soup. Progresso Chicken noodle. It hit the spot.


I ate it with a Dr. Kracker Cracker. LOVE THESE!

And Dinner was back to normal! My yummy nut butter stirfry.
- veggies: carrots, broccoli, cabbage, red cabbage
- kikkoman teriyaki sauce

So, I recently decided not to watch food network at night anymore. I am trying to watch non-food shows. So, I saw "The Devil Wears Prada." I hadn't seen it in a long time. This movie hit me on so many levels tonight. I don't want to say too much, but I could relate a lot to the main character and how she felt about her job. It was refreshing watching it, since I am no longer in the situation. But, I remember feeling the way the main character felt that she "had no choice" but to deal with it. I felt the same way, and put my family and friends through hell. I was so miserable and my life centered around my job. I am no longer in that situation and I am so much happier because of it :) But it did affect my self-esteem for some period of time afterwards.
OK, well I am off to bed... debating eating more since I am kind of full from dinner still.

Home Sick with the Flu :(

So, this morning I am home with the flu :( Ugh, it's the worst feeling. I am feeling a little bit better, as I slept 13 hours, but I haven't eaten anything since about 4PM yesterday. It's now 8AM. My stomach feels a bit sour, so I am afraid to eat anything. I tried to lie down again, but I am just not tired. I guess 13 hours of sleep worked :) Unfortunately, I also had a docto

So, yesterday was my "off day." Sundays are my rest days and I don't workout. I went and did my weekly shopping for veggies at russo's. I woke up at 7AM and felt awful. I thought for sure I had food posioning.

Breakfast was an egg white, cheddar cheese and peanut butter scramble. I got this recipe from http://www.mrbreakfast.com/, but I eliminated the bacon bits.

- 4 egg whites
- next generation dairy organic cheddar cheese
- 1 tablespoon krema products peanut butter



It was so good, I was craving more peanut butter and eggs. This time I wanted a sweet version; Cinnamon-y Peanut Butter Eggs

- 4 egg whites
- 1 tablespoon krema products peanut butter
- cinnamon
- stevia





For lunch, I used Stef's idea and mixed my salsa with hummus for a perfect dressing:

- salad (lettuce, tomato, pickles, cucumbers, green peppers)
- 2 tablespoons Don Sabrosa roasted garlic salsa mixed with 2 tablespoons roasted red pepper hummus



After the salad, I felt sick.... I only ate 1/2 of it. I made sure I ate all the cheese, though... An hour later I still felt so hungry and snacked on some pretzels.


Lastly, frozen banana with Naturally Nutty Butter Toffee Peanut Butter.



And that was the last thing I ate. I got home at 5:00 PM, took a hot, hot shower and then went to bed. I woke up at 6:30 AM.
That would be 13 hours of sleep!
OK, I am off to make some toast with peanut butter....

I did it!!!

Note: So, I made my goal of running 18 miles Saturday and it felt good :) It has been over a year since I ran this much. Unfortunately, since I did it so early in the morning, it was all the treadmill because I hate running in the cold. I had to get up at 4:30. I broke it up into three pieces. I ran 9 miles, then 6 then 3 with food and water breaks in between (I drank water continuously, but couldn't get enough in except the breaks.



I started off the morning bright and early with french meadow cinnamon raisin bagel with 1 tablespoon better 'n peanut butter.





My running fuel: Kashi pumpkin spice flax bar and Clif white chocolate macadamia nut bar.





When I was done running, I was craving salt big time. I aways do. So, I made a sunshine burger topped with next generation dairy cheese, and sauteed tomato, peppers, onions and Don Sabrosa Salsa on the side.





I liked the combo so much, I made it again, this time I made an omelette. I subbed the burger for 4 egg whites.


- 4 egg whites
- next generation dairy cheese
- sauteed onions, peppers and tomatoes
- Don Sabrosa roasted garlic salsa




A couple of hours later, I had a salad with some chicken and next generation sharp cheddar cheese.



with a banana.



And then I made frozen bananas coated with almond meal. I cut a banana into slices, rolled it into some almond meal and froze it. Came out awesome :)



I went to dinner with my awesome boyfriend. We went to Minado's in Natick. It's a sushi buffet. It is the BEST sushi ever. I basically had two plates that looked like this.... yes, two plates :) and then some ice cream.
