Ginger Garlic Roasted Carrots

Note.... with peanut butter as dipping sauce, of course :) Krema Products peanut butter is just so ridiculously good. It makes a good dip because it's so smooth.

Ingredients:
- 1/2 bag carrots
- 1/2 tablespoon Garlig Gold Oil
- teaspoon Garlic Gold Nuggets
- teaspoon Garlic Gold Sea Salt Nuggets
- tablespoon krema products peanut butter
- minced ginger

directions: Remove carrots from bag and remove excess water by patting with paper towel. Mix in a bowl with garlic gold oil, nuggets and ginger. transfer to pan and roast for about 30 minutes. Dip in peanut butter.



Baked Almond Crusted Carrot Fries with PB

Ingredients:
- 1/2 bag carrots
- 15 grams almond meal
- tablespoon krema products peanut butter
- sea salt

Directions: Dry out carrots in paper towel. Dip each one in almond meal and lay on pan. If you have excess, just dump it all on top :) Top with sea salt. Bake in oven at 400 for about 30 minutes.



Almond Meal Crusted Plantains

Ingredients:
- 1/2 plantain
- 15 grams almond meal
- cinnamon

Directions: Cut plantain in slices. Dip into almond meal. Bake in oven at 400 for about 20- 30 minutes. Remove from oven and top with cinnamon.



Chickpea and Almond Butter Stir Fry

Ingredients:
- cabbages: red and napa
- carrot
- celery
- green onion
- 1/4 cup garbanzo beans
-1 tablespoon krema products almond butter

Directions: Cook veggies in kikkoman teriyaki sauce. Remove from heat and top with chick peas and almond butter.



Almond Meal and Almond Butter Stir Fry

Note: Almond meal is usually used in baking, but I liked it as a topping on my stir fry.

Ingredients:
- cabbages: red, green and napa
- onion
- carrots
- 1 tablespoon krema products almond butter
- 15 grams almond meal
- celery
- green onion
- teriyaki sauce (kikkoman)

Directions: Cook onion and carrot. Then add the softer vegetables and cook. Once all cooked, remove from heat and sprinkle with almond meal and almond butter.



Teriyaki Eggs and Almond Butter

Ingredients:
- 4 egg whites
- minced ginger
- teriyaki sauce
- one tablespoon krema products almond butter
- green onion

Directions: cook egg whites and ginger. Remove from heat. Top with teriyaki sauce and almond butter. Sprinkle with sliced green onion.



Teriyaki Chicken and Oatmeal

Ingredients:
- Nature's Path Oatmeal
- teriyaki sauce
- 3 ounces chicken
- green onion

Directions: Cook oatmeal. Add cooked chicken and top with teriyaki sauce. Sprinkle sliced green onion on top.






Spicy Chicken and Oatmeal

Ingredients:
- 1 package of Nature's Path Organic Oatmeal
- 3 oz chicken
- veggies: tomato (deseeded), green pepper, red onion, green onion)
- benson's spicy seasoning (calypso)

Directions: Cook oatmeal. Add cooked veggies, chicken and benson's seasoning. Top with sliced green onion.



Teriyaki Eggs and Kaia Sunflower Seeds

Note: Another twist on the teriyaki eggs... with teriyaki flavored sunflower seeds. You can use kaia sunflower seeds, which are absolutely amazing or try some homemade ones here. http://eatoxygen.blogspot.com/2010/01/homemade-teriyaki-sunflower-seeds.html

Ingredients:
- 4 egg whites
- 1 serving kaia foods teriyaki sunflower seeds
- teriyaki sauce
- green onion and red onion slicesd

Directions: Cook red onion and egg whites. Remove from heat and top with teriyaki sauce, sunflower seeds, sliced green onion.




Nicobella Truffles Review - Part 2

Note: So, I loved the nicobella truffles so much, I couldn't wait to come home from work today and try 2 more! I decided to freeze them and they were so awesome. These are a perfect treat. I really am super impressed that truffles that are so healthy taste so good! Amazing! So, the next two up were: 1.) walnut flaxseed crunch and 2.) Blueberry Almond.

Walnut Flaxseed Crunch- this was absolutely amazing. It had a soft chewy center and a thick chocolate shell. So awesome. Only 60 calories per treat!

Blueberry Almond- Again, the more I try these chocolates, the more I love them :) Blueberry almond was awesome. And only 40 calories per piece! The picture below does the chocolate no justice. Coconut Flour Bread

Note: This is a good low carb alternative to regular bread.

Ingredients:
- 2 tablespoons coconut flour
- 3 egg whites
- 1/2 tablespoon navita's naturals coconut oil

Directions: mix all ingredients and place in coconut oil greased mini loaf pan. Bake at 350 until it looks ready. likr 20 minutes or so.



Pistachio and Peanut Butter Stir Fry

Note: Another seed and nut butter stir fry...

Ingredients:
- cabbages: red, green and napa
- onion
- carrots
- 1 ounce pistachios
- 1 tablespoon krema products peanut butter
- soy sauce

Directions: saute onions in soy sauce. Add chopped carrot. Then cabbages. Remove from heat and top with pistachios and drizzle peanut butter over it.



Asian Style Egg White Oatmeal

Note: A savory twist on oatmeal.

Ingredients:
- packet of nature's path oatmeal
- 5 egg whites
- soy sauce
- green onion

Directions: Cook oatmeal. top with cooked egg whites, soy sauce and green onion slices.



Asian Style Oatmeal

Ingredients:
- 1 packet Nature's Path Oatmeal
- 3 oz chicken
- soy sauce
- green onion

Directions: Cook oatmeal. Add cooked chicken and soy sauce. Top with soy sauce and sliced green onion.




Curried Chicken and Oatmeal

Ingredients:
- packet of Nature's Path Organic Hot oatmeal
- 3 oz chicken
- curry powder
- sliced green onion

Directions: in a bowl, cook oatmeal. Add cooked chicken and top with curry powder and slices of green onion.




Egg White and EVOO Scramble

Ingredients:
- 5 egg whites
- veggies: tomatoes, red onion, green pepper
- 1 tablespoon kenzoil olive oil

Directions: saute onion, green pepper and tomato. Add to egg whites and cook egg whites. Remove from heat and top with kenzoil olive oil.

Nicobella Truffles (Product Review)

Note: Thanks to Nicobella for sending me these AWESOME vegan dark chocolate truffles. I was a little skeptical of how they would taste, but so far, they are 2 for 2. I have tried the coca bliss and the sunflower banana butter and they are so delicious. Not only are they tasty, but they are much healthier than regular chocolates. I had to put the box back in the fridge or else I would have eat the rest. I can't wait to sample the rest. I HIGHLY, HIGHLY recommend you try these delicious treats. Oh wow, I am was impressed.

Teriyaki Tofu and Broccoli Stir Fry

Ingredients:
- head of broccoli
- 1/2 onion
- carrots
- minced garlic
- minced ginger
- teriyaki sauce
- 1/2 package of nasoya lite firm tofu

Directions: saute onions with teriyaki sauce, minced ginger and garlic. add chopped carrot. Then add broccoli, tofu and more teriyaki sauce and mix through until broccoli is cooked.





Roasted Broccoli with Cheese and Garlic Sunflower Seeds

Note: I used the last of my garlic and sea salt sunflower seeds :( I have a mock recipe that is not anywhere near as good as kaia's. http://eatoxygen.blogspot.com/2010/01/homemade-garlic-and-sea-salt-sunflower.html

Ingredients:
- head of broccoli
- 1 ounce sargento all natural part skim cheese
- 1/2 ounce kaia foods sunflower seeds

Directions: Cut broccoli in bite size pieces. Roast in oven at 400 for about 25-30 minutes, until tops are crispy and black. Remove from oven top with cheese. Turn oven off and put it back in oven so cheese melts. remove and top with sunflower seeds.

Roasted Acorn Squash with Chia and Peanut Butter

Note: This turned out awesome! I just love the peanut butter and chia combo. I have to say, though... kabocha (or otherwise known as buttercup squash) is SO much better.

Ingredients:
- small acorn squash
- 1.5 tablespoons krema products peanut butter
- 1 teaspoon chia seeds

Directions: Cut acorn squash in half and roast for 45 minutes in 425 degree oven. Remove and drizzle with peanut butter and chia seeds.





Coconut Flax Pancakes

Note: I am on a coconut flour pancake kick lately :)

Ingredients:
- 1 tablespoon coconut flour
- 2 egg whites
- tablespoon krema products peanut butter
- tablespoon flax seeds

Directions: mix coconut flour, egg whites and stevia. Cook on non-stick skillet. Top with peanut butter and flax.


Protein Oatmeal


Ingredients:
-package of Nature's Path Organic Hot oatmea;
- 1/2 scoop youbar protein powder
- 1/2 cup unflavored chocolate almond breeze
Directions: I prepared everything the night before (put it al in a bowl). Then in the morning, I added a but more almond breeze and microwaved.



Rold Gold Pretzels

Note: I love these pretzels, but it's been a while since I had any. Not for any reason, I just haven't been in the grocery store to buy them. I have a huge sweet tooth, and I just love these honey wheat ones from rold gold. one bag has only 230 calories! I will be snacking on these later on at work!

Kettle Brand Hickory Honey Barbeque (Product Review)

Note: Thanks to Kettle for sending me a couple of Hickory Honey Barbeque chips to sample. My sister loved them so much she ate the bag in one day :) She couldnt believe how good they are. Me neither! If you had blindfolded me and taste tested me, I probably wouldn't have guessed they are as healthy as they are. These chips are just so awesome. As you can see from the front of the bag, they have 65% less fat than regular potato chips. One serving/20 chips (see pic below- I measured in grams to show you) has only 120 calories, 3 grams fat, 0 trans fats, 21 grams carbs, 2 grams fiber, 1 gram sugar and 3 grams protein. That's a big portion for so few calories! I definitely recommend you go out and try these chips. I saw them at whole foods this week and my local grocery store.

Ingredients: Potatoes, safflower and/or sunflower oil, honey powder (cane
sugar, honey), salt, onion powder, tomato powder, paprika, yeast extract, torula
yeast, chili peppers, garlic powder, citric acid, paprika extract, natural hickory
smoke flavor (maltodextrin, natural hickory smoke flavor).

The hickory smoked flavor is both sweet and salty. It is just so awesome. They come in other flavors, too, that I can't wait to try: salt and pepper, sea salt and vinegar, aged white cheddar, and lightly salted.

Kashi Pumpkin Spice Flax Bar (Product Review)

Note: A co-worker insisted I try these. These are awesome! They kind of remind me of a nature valley bar in terms of shape, texture and size (2 crunchy bars in one package). I love this flavor, though. And the stats are great, too! 2 bars have only 170 calories, 6 grams of fat, no trans fats, 26 grams carbs, 4 grams of fiber, 8 grams of sugar and 6 grams of protein.

I am a huge fan of kashi in general. Such a great company. These bars come in 2 other flavors: Honey Toasted 7 grain and Roasted Almond Crunch.



Kabocha Pudding

Note: I got this idea from www.heathereatsalmondbutter.com. That girl is just awesome. I am now obsessed with kabocha squash, too. The pictures do this no justice.

Ingredients:
- 1/2 small roasted kabocha squash, skin removed.
- packet of amazing grass chocolate powder
- 2 teaspoons cocoa powder
- 1/4-1/2 cup unsweetened almond chocolate breeze
- 1/4 cup Daisy cottage cheese
- purevia

Directions: mix it all up in a blender!
