Oatmeal with Roasted Plantains

Note: Although chocolate almond milk is pictured, I ended up using water and opted for a cinnamon oatmeal instead.

Ingredients:
- packet of Nature's Path hot oatmeal
- 1/2 plantain
- cinnamon
- truvia

Directions: Cut plantain into circles. Bake plantain rounds in oven at 400 until crispy. Top with cinnamon. Meanwhile, make oatmeal with stevia and top with plantain and more cinnamon.
