Roasted Garlic Zucchini with Garlic PB and Melted Mozarella

Note: Peanut butter and cheese go GREAT together... espeically garlicky peanut butter and mozarella.

- zucchini
- minced garlic
- sea salt
- sargento all natural light cheese, 1 oz
- 1 tablespoon krema products peanut butter
- benson's gourmet all natural salt subsitute

Directions: Mix peanut butter and garlic and let sit. Roast zucchini with seasoning and garlic. Bake at 400 for about 40 minutes. Top with cheese. Bake for another 10. Take out and drizzle with peanut butter. Top with more seasoning.
