Kathy's Krackers with Cottage Cheese and Roasted Veggies

Note: A sandwich alternative

Ingredients:
- One Sheet Kathy's Flax crackers
- 1/4 cup Daisy cottage cheese
- tomato
- zucchini
- seasonings: oregano and basil
- benson's gourmet seasoning (calypso)- spicy for some heat

Directions: Mix cottage cheese with oregano and basil. De-seed tomato and lay flaat on baking sheet. Cut zucchini into sices. Top veggies with sea salt, benson's, oregano and basil. Roast veggies at 400 for about 40 minutes. Serve cracker with cottage cheese and roasted veggies
