Kabocha Squash Pancakes

Note: These are popping up everywhere on blogs, so I am not sure who to give credit to... but this is my spin on them. I only had two eggs pictured, but ended up needing 6 to make them stick together. Not only were these ridiculously good, but the pancake batter was very awesome as well :)

- 3/4 package Nature's Path Oatmeal
- 6 egg whites
- cinnamon
- small kabocha squash (buttercup squash)
- purevia

directions: Cut kabocha squash in half and scoop out seeds. Top with sea salt. Bake in oven at 400 for about an hour. Mix with egg whites, cinnamon and purevia. Cook on non-stick skillet.
