Egg Whites with Cashew Butter and Mozzarella Cheese

Note: oh wow, this was so much better than I thought it would be. With the cashews from the package that my awesome boyfriend got me, I made a cashew nut butter. It came out a bit pasty and wasn't very spreadable, but was delicious!

Ingredients:
- 3 egg whites
- 1/2 oz sargento part skim all natural mozarella cheese
- 1 tablespoon homemade cashew butter

Directions: cook egg whites. top with mozarrella and let it melt. Spread cashew butter on top.





Chocolate Banana Pumpkin Tofu Pudding

Note: Thanks to Nasoya for sending me coupons to try their delicious silken tofu. I love how it makes the most awesome pudding ever. This pudding was so good, you can't even taste the pumpkin. if you have kids, they will love this.

Ingredients:

- 1/3 package Nasoya lite silken tofu

- 1/4 cup pumpkin

- 1/2 tablespoon cocoa powder

- small banana

- truvia

Directions: Blend all ingredients in magic bullet. Chill for about 20 minutes and eat.



Roasted Onion with Melted Mozzarella Cheese

Note: This was also inspired by Robin Miller. On snowy days I guess I like to watch food network re-runs :) Seriously, you can roast onions and use them as a side dish with anything: chicken, in a sauce, with cheese, ground meat.

Ingredients:
- onion
- 1 oz mozzarella cheese (I used sargento all natural part skim)

Directions: Cut onion in quarters. Don't cut all the way through. Put on pan and roast at 400 for 40 minutes. Onion will literally fall apart as it cooks. Top with mozzarella cheese. Cheese will naturally melt after a minute or so.







Vegetarian "Sausage" Spaghetti with Roasted Tomatoes and Tomato Sauce

Note: Using the Roasted Tomatoes and Tomato Sauce I made here http://eatoxygen.blogspot.com/2009/12/roasted-tomatoes-and-roasted-tomato.html, I made a Spaghetti with Sausage and Tomato sauce. Yummy.

Ingredients:
- shirataki noodles
- LightLife chorizo sausage
- roasted tomato sauce
- roasted tomatoes

Directions: Rinse and drain noodles. Cook on a pan with tomato sauce and chorizo. Top with roasted tomatoes.



Roasted Tomatoes and Roasted Tomato Sauce

Note: I was inspired by this after watching Robin Miller today. She's great, I always think her food looks awesome. And like me, she's an Italian!

ROASTED TOMATOES

Ingredients:
- tomato
- sea salt
- seasoning: I used Benson's all natural salt substitute seasoning

directions: Cut tomatoes into chunks, so flesh side is up. Salt and season tomatoes. Roast in oven at 400 for 30 minutes.





Tomato Sauce
- Using my roasted tomatoes above, I pureed with a bit of vinegar and onion to make a tomato sauce. This sauce can be used for Chicken, on low carb noodles, etc.
Ingredients:
- roasted tomatoes (see above)
- onion, cooked on skillet
- balsamic vinegar
- minced garlic
Directions: Take roasted tomato and puree with garlic, onion and balsamic vinegar.

Pumpkin Cake with Peanut Butter

Note: I have seen this on a few blogs and on sparkrecipes... pumpkin cake! I subbed truvia for honey, agave and/or other sweeteners I saw out there. I might try it with a 1/2 cup pumpkin next time. Yes, this was so delicious, there will be a next time!

Ingredients:
- 3 egg whites
- 1/3 cup pumpkin (80 grams)
- cinnamon
- splash vanilla
- truvia packet
- topping: one tablespoon peanut butter!

Directions: mix all ingredients, except PB in microwaveable bowl. Plop in microwave for two minutes until firm like cake.




Teriyaki Cashew Stir Fry

Note: My wonderful boyfriend gave me a package of mixed nuts, so I picked out the cashews and made a cashew nut stir fry!

Ingredients:
- cabbage (red and green)
- carrot
- onion
- teriyaki sauce
- handful of cashews

Directions: saute onions first. Then add in carrots, then cabbage. Add teriyaki sauce. Once cooked, remove from heat and top with cashews.

Cranberry Yogurt with Cranberry VitaTop

Note: I liked my "chocolate trifle" I made yesterday so much I made a cranberry version.

Ingredients:
-1/2 cup cranberries
- truvia
- 1/2 container voskos non fat plain greek yogurt
- Cran Bran Vita top

Directions: Boil and mash cranberries untill all have "popped." Mix cranberries with yogurt and truvia. Add in pieces of cran bran vitatop. Mix together.



Pumpkin Banana Yogurt

Note: amazing stuff.

Ingredients:
- 1/2 container voskos non fat plain greek yogurt
- tablespoon or 2 of pumpkin
- cinnamon
- truvia
- small banana

Directions: mix pumpkin, yogurt, truvia and cinnamon. Add in diced banana.



Flax Cottage Cheese Salad

Note: want to add omega 3's and protein to your diet. Cottage with flax seed makes a delicious salad topper.

Ingredients:
- salad stuff (lettuce, tomato, cucmbers, carrots)
- 1 serving Daisy Cottage cheese
- 2 tablespoons flax seed

Directions: mix cottage cheese and flax seed. Top on salad.



Sunshine Falafel Salad

Note: Thanks to Sunshine Burger, I got to make a salad topped with Falafel burger.

Ingredients:
- salad stuff (lettuce, tomato, green peppers, carrots, cucumbers)
- Sunshine Falafel burger Patty
- salsa
- dressing: balsamic vinegar, mustard, truvia

Directions: make salad. Top with chopped falafel burger, salsa and salad dressing.




Veggie "Sausage" Salad

Note: Thanks to Lightlife, I got to make a salad topped with sausage. Wow, these sausages are so good!

Ingredients:
- salad stuff (lettuce, tomato, green peppers, carrots, cucumbers)
- Lightlife Sausage
- salsa
- dressing: balsamic vinegar, mustard, truvia

Directions: make salad. Top with chopped chorizo, salsa and salad dressing.



Turnips with Dried Fruit

Note: I made two variations. One with dried bananas and the other with dried apples. Of course, I had to add peanut butter on top :)

Ingredients:
- 1/2 turnip Each (1 turnip total)
- dried fruit
- cinnamon
- krema peanut butter

Directions: boil and drain turnips. Top 1/2 of turnips with dried apples, peanut butter and cinnamon. Top other 1/2 with dried banana, cinnamon and peanut butter.







Chocolate Yogurt "Trifle"

Note: OMG, this reminded me of when I was younger and my mom made me trifle... this is a healthified version. If you don't have amazing grass protein powder, you can sub cocoa powder.

Ingredients:
- 1/2 container non fat voskos plain yogurt
- scoop of amazing grass chocolate superfood (sub 1 tablespoon cocoa powder)
- truvia packet (I ended up not using it, since the amazing grass was sweet enough)
- vita muffin

Directions: mix amazing grass, yogurt and truvia together. Add in pieces of vita muffin.





Banana Blueberry Yogurt with Green SuperFood

Note: This is a very healthy anti-oxidant packed breakfast thanks to amazing grass, voskos greek yogurt and healthy blueberries! there is a reason they call is green food! The powder turned green!

Ingredients:
- serving amazing grass berry green super food
- 1/2 container voskos non fat plain greek yogurt
- truvia (not pictured)
- 1/2 -1 cup frozen blueberries
- 1/2 frozen banana

Directions: mix truvia, amazing grass powder, and yogurt. top with blueberries and banana. will make a thick yogurt mess!

Turnips topped with Smoked Almonds and Peanut Butter

Ingredients:
- 1/2 turnip
- 1/2 - 1 oz smoked almonds
-peanut butter

Directions: boil and drain turnips. Top with peanut butter and smoked almonds.






Peanut Butter and Flax Turnips

Note: and the PB and turnip addiction continues...

Ingredients:
- 1/2 turnip
- 2 tablespoons flax
- cinnamon
-1 tablespoon krema peanut butter

Directions: boil and drain turnips. Top with cinnamon, flax and penut butter.



Lower Carb Vegetarian Spaghetti with "Meat Sauce"

Note: This was one of my yummier creations. I could totally sub reg pasta and meat sauce for this yummy dish.

Ingredients:
- package of shirataki noodles
- small pack of Bragg Nutritional yeast (optional)
- serving of lightlife smart ground
- small tomato, deseeded.
- 1 oz mozarella cheese
-salsa (optional)- I ended up not using it

Directions: rinse and drain noodles. In a pan cook, ground beef. Add noodles. Once cooked, add diced/de-seeded tomatoes, nutritional yeast and mozzarella so that the cheese melts.

Chicken Mozzarella Egg White Scramble

Note: I apologize for this pic coming out so badly. Had to take with my sister's iphone.

Ingredients:

- 3 oz chicken

- 1 oz part skim all natural mozzarella cheese (Sorrento)

- veggies (green pepper, onion, tomato)

Directions: Cook eggs in micro until cooked through. Separately, micro veggies in microwave until soft. Combine the two, top with cheese and chicken. Micro for another minute until cheese melts.



Chicken and Mozzarella Salad

Note: Finally, I found a new all natural lcheese that I like, Sorrento. It's part skim, so it's lighter than other cheeses out there. A 1-ounce serving has only 90 calories, 6 grams of fat, and 8 grams protein. No sugar either! In addition, there are no trans fats.

Chicken and Mozzarella Salad
- Salad (lettuce, tomato, pickles, onions, cucumbers, green pepper)
- 3 oz chicken
- 1 oz diced sorrento mozzarella cheese



Voskos Yogurt (Product Review)

Note: Thanks to Voskos yogurt for sending me coupons to sample their greek yogurt! Wow, this is some thick yogurt! Look at the pics below. I love their yogurts, since they are high in protein, all natual contain live and active probiotic cultures, contain no rbst, rbgh, gmo, and are gluten free! In particular, I love this yogurt, because it has a lid on it. Most other greek yogurts don't if you buy a smaller container, so you can't store it for later use unles you move to another containter. If you live near a whole foods, I definitely recommend you go out and grab yourself a container of this yummy yogurt.

Plain yogurt- one 8 0z container of plain non fat yogurt contains 140 calories, 0 fat, 9 grams carbs, 8 grams of sugar and 24 grams of protein (!!).

The company also sells original, low fat, greek honey, wildberry, honey vanilla bean, exotic fig and wild strawberry. They also sell organic plan, greek honey and vanilla bean.
