Maple Cinnamon Sweetened Plantains

Note: I started off with just cinnamon and stevia, but then decided to add some SF maple syrup. Yum.. NOTE: plantain must be BLACK or else it will not be ripe enough.

Ingredients:
- Plantain
- cinnamon
- stevia
-sugar free maple syrup

Directions:
Cut plaintain into 1/2 inch rounds. Cook on a non-stick skillet. Top with cinnamon and sweetener. Once cooked, top with sugar free maple syrup.














Lower Carb Chicken Noodle Soup

Note: Lower carb chicken noodle... (I added cabbage)

Ingredients:
- 5 oz chicken
- bouillion cube (I probably spelled that wrong)- enough to make two cups
- cabbage
- carrots
- celery
- onion
- shirataki noodles
- salt and pepper

Directions:
Wash and rinse noodles. Pat dry. Cute veggies into bite sized pieces. Dissolve bouillon cube into hot water. Add veggies and chicken. Cook. Then add noodles.














Peanut Butter and Sugar Free Jelly Greek Yogurt

Note: Loving my PB&J lately...

Ingredients:
- 6 oz container of yogurt
- tablespoon of natural peanut butter
- tablespoon sugar free jelly
- sweetener of choice (optional)

Directions: mix all ingredients together.








Almond Butter Teriyaki Chicken Cabbage Stir-Fry

Note: I am obsessed with my cabbages lately. Especially stirfried.

Ingredients:
- teriyaki chicken
- tablespoon almond butter
- red cabbage
- green cabbage
- carrot
- soy sauce
- rice vinegar
- hot pepper flakes

Directions: Cook veggies with soy sauce and rice wine vinegar. Add hot pepper flakes. (I microwaved the teriyaki, but you can throw it in the skillet). I melted the almond butter and spread it on chicken.














Chicken and Cheese Tortilla Nachos

Note: I made this using the salba smart chips, but you can sub other chips.

Ingredients:
- serving of tortilla chips
- 2 oz chicken
- 28 grams fat free shredded mozzarella cheese
- 1 tablespoon salsa

Directions: Lay tortillas on plate. Cover with chicken, then cheese, then salsa. Microwave for about a minute or two. Enjoy :)











Salba Smart Chips (Product Review)

Note: yummy chips with omega-3's? That's right up my alley :) I had actually never heard of Salba before, until I met this Company at the Expo.

These chips are all natural.

Flax Packs (Carrington Farms) Product Review

Note: Another product I got to try was Carrington Farms Organic Milled Flaxpacks. These are convenient on-the-go flaxseed packs that you can take with you to work or school.

From their website: Flax seeds are a great source of fiber, lignans, protein, essential fatty acids, omega 3 & omega 6, vitamins, and minerals. Researchers also believe lignans to have antioxidant properties. Flax seed has up to 8 times more lignans than other vegetables and grains! The vitamins and minerals found in flax seeds are zinc, iron, vitamin E, carotene, B-group vitamins, magnesium, calcium, sulfur, potassium, phosphorous, manganese, silicon, copper, nickel, molybdenum, chromium, and cobalt. For every 12 grams of flax seeds, you get about 3-4 grams of protein.

Soy Wonder Soy Nut Butter (Product Review)

Note: Another product I got to try at the expo was Soy Wonder, a peanut free Peanut Butter. WOW, it tastes good. I almost wonder whether if I tried it without knowing it was peanut butter would I know the difference? I have tried so many flavored peanut butters, I probably wouldn't have!

I highly recommend this for people who like peanut butter, but can't have peanuts (and my deepest regrets go to you as well). It tastes just as good as regular peanut butter, so you aren't missing much!

Asian Peanut Chicken Salad

Note: This was my meal 3 today. Lower carb, high protein, and peanuts!

Ingredients:
- 3 oz chicken
- 15 grams peanuts
- green cabbage
- red cabbage
- soy sauce
- carrot
- celery

Directions: Cut up veggies and mix with chicken, peanuts and soy sauce.













Protein Cookie Bites (Kay's Naturals) Product Review

Note: OMG, these were sooo yummy. I had them pre-run/workout this morning with a banana. I can't wait to try more of these products from Kay's Naturals.

I SERIOUSLY CAN'T BELIEVE HOW YUMMY THESE ARE! Highly recommend you go out and try them! They are made with lots of cinnamon and definitely satisfied my sweet tooth.


Maple Cinnamon Soy PB Eggs

Note: A high protein, lower carb sweet dessert.

Ingredients:
- 5 egg whites
- 1 tablespoon Soy Wonder PB (you can also use regular PB or PB2)
- 2 tablespoons sugar free maple syrup
-tons of cinnamon
- 1 tablespoon flax
- sweetener of choice

Directions: Mix sweetener, cinnamon and egg whites. Cook on non-stick skillet or microwave in a bowl. Top with maple syrup, flax and PB.
