Zucchini Pancakes

Note: this was supposed to be a pancake, but didn't hold together very well, so it was more like a scramble. Even though it was delicious!

Ingredients:
- 1/2 zucchini, grated
- tablespoon coconut flour
- 1/4 cup cottage cheese
- 1 egg white
- seasonings (I used Benson's Gourmet Garlic Herb)
- onion
- minced garlic.

Directions: Cook garlic and minced onion in non stick skillet. Mix the rest of the ingredients and add to ingredients in non-stick skillet.
