Note: using the hummus I made here http://eatoxygen.blogspot.com/2009/12/blog-post.html, I created a spicy chicken salad.
- 2 tablespoons hummus
- 1 tablespoon salsa
- 3 oz chicken
- dab of hot sauce
- 5 Dr. Kracker Spicy PB Crackers (cut into bite size pieces as an alternative to croutons)
- salad (lettuce, tomato, cukes, onion)
Make salad. Mix hummus, salsa, hot sauce. Then mix with chicken. Top on salad. Add croutons on top.
