Note: ok, after making the zucchini and smoked almond meal, I was curious to see how smoked almonds would taste as a nut butter.... amazing!
Nut butters are really easy to make. When I first heard you can make your own, I thought only really amazing chefs could pull it off. Seems so complicated. It's not, all you need is an amazing food processor. it does all the work, (well, except you may need to scrape the sides of the bowl every now and then).
All you need is a bag of smoked almonds. If they are raw, you must roast them or else they will be pasty. Bake in oven at 300 (with or without oil- I never add oil) for about 10 minutes. once toasted, plop in food processor and whirl up until it turns into a nut butter. You may need to stop and scrape the sides down every now and then.
So easy a Pizzi can do it :)
