Note: This was also inspired by Robin Miller. On snowy days I guess I like to watch food network re-runs :) Seriously, you can roast onions and use them as a side dish with anything: chicken, in a sauce, with cheese, ground meat.
- 1 oz mozzarella cheese (I used sargento all natural part skim)
Directions: Cut onion in quarters. Don't cut all the way through. Put on pan and roast at 400 for 40 minutes. Onion will literally fall apart as it cooks. Top with mozzarella cheese. Cheese will naturally melt after a minute or so.
