Note: OK, I am sure you noticed I love cottage cheese in my salad and hummus. I added a twist to it: pumpkin!
- salad (lettuce, tomato, onion, cukes, carrots)
- 1/2 cup cottage cheese mixed with 1/4 cup pumpkin
- 2 tablespoons hummus and 1 tablespoon pb mixed
Directions: mix cottage cheese and pumpkin. separately, mix pumpkin and hummus. Top on salad.
