Peanut Butter Chicken Stuffed Acorn Squash

Note: I wasn't sure if this would work, but it was awesome! And so easy to make!

- 1/2 acorn squash
- 3 oz chicken
- 1 tblspn almond butter

Directions: Cut acorn squash in 1/2. Scoop out seeds and pulp. Microwave on high for about 5-6 minutes to soften. Meanwhile, mix peanut butter and chicken. once microwaved, stuff with chicken/pb mix. Bake at 350 for about 10-15 minutes.
