Note: I love loaded baked potatoes. This is a different version... healthy style :) I really don't eat white potatoes anymore, I opt for sweet instead. The addition of the beans make this a high protein meal. You can sub chicken instead, too!
- 1 small baked potato
- 1/4 cup black beans
-veggies (I used tomato, green pepper and onion)
Directions: Baked sweet potato. Cook veggies and beans in a non-stick skillet. Top veggies/beans on sweet potato with salsa.
