Note: OMG, these were amazing. I could easily use these as a sub for regular hash browns anyday.
-1/2 butternut squash, cut into shreds
- 1 egg white
- 1/4 onion
- minced garlic
- chili powder
- cookiing spray (I used gourme mist)
Directions: shred butternut squash. Remove extra water from squash by soaking in towel and squeezing out the juice. In non-stick skillet sprayed with pam, cook garlic and onion. add egg white and butternut squash and cook like hash browns. Top with spices.
