Note: I started off making this as a stuffed acorn squash, but had to much stuffing and made into an entree.
- 1/2 acorn squash
- red apple
- tablespoon macadamia nutbutter
Directions: Cut acorn squash in 1/2. Microwave on high for about 4-5 minutes. Meanwhile chop apple in slices. Mix with macadamia nut butter and stuff acorn squash. You can bake apple, but I like it the way it is.
