Vegetarian Mexican Tofu Scramble

Note: Here's an egg-less tofu scramble.

- 1 block tofu (firm)
- 1/4 cup black beans
- zucchini
- onion
- tomato
- paprika
- cumin
- chili powder
- salsa

Directions: Saute onions first with all the seasonings. Once relatively soft, add zucchini, black beans and tofu. Add more seasonings. Once cooked, top with salsa and mix so it's stirred through.
