Tofu and Veggie Egg White Scramble

Note: Using Wildwood Organics Sproutofu veggie burgers (southwest style), I made a spicy veggie scramble. I had no stove available, so it was microwaveable egg whites for me.

- Wildwood organic southwest tofu burger (can sub any tofu or meat)
- 3 egg whites
- veggies (green pepper, tomato, onion)
- salsa
- salt and pepper

Directions: Dice veggies finely and microwave for about a minute to soften. In a bowl, crack egg whites and add veggies in. Cook in micro until egg whites are cooked through. slice tofu into bite size pieces. Once cooked through toss, in burger and mix salsa in. Top with salt and pepper.
