Teriyaki Pineapple Coconut Chicken

Note: Not only do I love regular fruit in my stir fries, I found a new low for adding dried fruit. Thanks to Peeled Snacks for sending me some dried fruit snacks, I got to use the dried pineapple in this meal. I love the fact that there is NO OTHER INGREDIENT in the package except organic pineapples. These are a supersweet and yummy snack on it's own... or you can add to stir-fries, breads, salads, etc.

Teriyaki Pineapple Coconut Chicken

- 3 oz chicken
- 1/2 package dried pineapple
- teriyaki sauce
- coconut flakes

Directions: Cook Chicken in skillet with teriyaki sauce. Toss in pineapple and coconut flakes.
