Note: Thank you to Rudi's Organic Bakery for sending me these spelt tortillas. I had never had spelt before, so I wasn't sure what to expect. I was attracted to Rudi's bread initially because all of their products are organic and I liked Rudi's philoophy of "making bread with ingredients you can pronounce." Not only are these healthy, but they tasted like normal tortillas. I wouldn't be able to taste the difference between this and a regular tortilla, other than the fact that it felt a bit thicker than normal tortilla's. However, they look and taste like a regular tortilla. (See pics below). And they are delicious, too. Even the boyfriend agreed. I recommend you try them.

What is spelt?
Spelt (Triticum spelta) is an ancient relative of wheat (Triticum aestivum). Often, people with wheat allergies can tolerate Spelt bread. Spelt has a higher protein content than modern wheat. Spelt is also loaded with complex carbohydrates and is easier for many to digest than wheat. Spelt does contain its own spelt gluten, which is important for those that cannot tolerate gluten from any source.
