- any veggies (I used zucchini, red cabbage, green cabbage, onion, carrot) - tomato is pictured, but I nixed it last minute.
- coconut oil (1/2 tablespoon)
- curry powder (1-2 teaspoons)
cut veggies into small pieces and lay on pan. Top with coconut oil and curry powder and cook at 400 for about 20 minutes, flipping 1/2 way through.
