Note: I wasn't sure what to do with the other 1/2 of my avocado, so I decided to make a grilled chicken and veggie avocado salad. I love grilled vegetables on salad, too.
- salad (lettuce, cucumbers, tomato, celery)
- grilling veggies (zucchini and onion)
- teaspoon oil
- 1/2 avocado
- 3 oz chicken
Directions: Cook the grilling veggies (zucchini and onion) in 1 teaspoon olive oil. Place salad in bowl. Add tomao, cukes and celery. In oven, cook veggies in oil for about 20 minutes. once cooked, let cool and top on salad. Cut avocado in slices and top on salad with chicken.
