Roasted Veggies with Flax

Note: never would I think I would get this obsessed with veggies. I roasted some more and topped with flaxmeal. I LOVED IT! I don't know if it's the oil I like (normally I eat plain) or the texture of them from roasting as opposed to steaming, but I can't get enough :)

- mixed veggies (I used zucchini, summer squash, red and green cabbage, carrot)
- tablespoon of oil
- tablespoon of flaxmeal
- chili seasoning

Directions: Cut veggies into pieces and toss in oil. Bake in oven at 350 for about 20 minutes. Top with flaxmeal, seasoning and salt.
