Note: OMG, if you are like me and love peanut butter on anything, this is the perfect meal for you.
- red pepper
- 3 oz chicken
- 1 rablespoon spicy PB (I used peanut butter and company "heat is on"), but you can use regular peanut butter and add cayenne and chili powder
- soy sauce
Directions: hollow out red pepper. Throw in oven for a bit (I used the same pan as the roasted veggies below, so some oil was left over.) I baked at 350. Meanwhile, mix chicken with peanut butter and soy sauce. Stuff in red pepper and cook for another 20-30 minutes.
