Lower Carb Choc Peanut Butter Ice Cream

Note: Tonight is HOT in Boston... I didn't have the appetite for anything hot for dinner, so I made some ice cream while watching tv :)

- 1/2 cup unsweetened choc almond breeze
- 1/2 cup fat free cottage cheese
- 1 tablespoon better 'n pb (or pb2) (or reg pb)
- 4 grams white choc sf/ff instant pudding
- pinch xantham gum (optional)
- stevia/ splenda to taste
- ice cubes

Directions: blend all ingredients and freeze.
