Banana Ice Cream

Note: You can eat this as ice cream (my fave), a thick shake or semi-freeze it.

- 1 cup skim milk
- 1/2 frozen banana
- 1/4 package (8 grams) sugar free/fat free banana cream instant pudding
- 1/4 cup fat free cottage cheese
- plenty of ice
- xantham gum (pinch or two, optional)- makes it thicker
- sweetener of choice (optional)

Directions: Blend all ingredients.
