Note: This basically used the same ingredients as my almond meal pancakes, but I baked it in the oven. It didnt make crackers, but more like flat bread that broke apart. Either way, it tasted good, but only the ends were cracker like. the middle was doughy, but the middle was more doughy. I would have cooked longer, but my oven was smoking a bit... as much as I love my local fire department boys, I didn't really want them to come over tonight :)
- 1/4 cup almond meal
- 1 egg white
- 1/8 teaspoon vanilla extract
- sweetener of choice (I used a splenda packet)
Directions: Blend ingredients in blender. pour on pam-sprayed parchment paper. press until thin. Cook in 225 degree pre-heated oven for 15 minutes.
