Yellow Squash Bread 2 Ways - Sweet and Savory

Note: So, I had a yellow squash that was I wanted to use up. Instead of making the traditional stir-fry, I decided to make two new loafs:

1.) Sweet Banana Squash
2.) Cheesy Squash

You can't even taste the squash.

Banana Squash Bread

Ingredients:
- 1/2 yellow squash
- 100 grams of shredded wheat 'n bran (can use 40 grams oatmeal)
- 1/2 banana
- 1 egg white
- cinnamon
- splenda

Directions: Shred yellow squash. Remove excess water with paper towel. Mix ingredients and cook in loaf pan at 350 until toothpick inserted in middle comes out clean.

Cheesy Squash Bread
Ingredients:
- 1/2 yellow squash
- 100 grams of shredded wheat 'n bran (can use 40 grams oatmeal)
- 1/4 cup wheat bran

- tablespoon fat free parmesan cheese (or low fat)
- 1 egg white
- 18 grams fat free or low cheese

Directions: Shred yellow squash. Remove excess water with paper towel. Mix ingredients except cheese and cook in loaf pan at 350 until toothpick inserted in middle comes out clean. Sprinkle cheese on top.
