Note: I got this from sparkrecipes.com, and modified it a bit. I know there are a bunch of other variations on this around the net. I will be honest. It's good, but dry. I topped mine with sweet cream cheese (fat free cream cheese and sugar free torani vanilla syrup) and it was SO good. But, I don't think I could eat it on my own.
-1/4 cup soy flour
- 1 tablespoon unsweetened cocoa powder
- 1 tsp baking powder
- 2 egg whites
- sweetener of choice
- 1 tablespoon torani sugar free vanilla syrup (or 1 tbsp water)
Mix ingredients and cook in micro on 60% power for 2-3 minutes. (watch it). It all depends on how strong your micro is.
