Coconut Peanut Butter Chicken Satay

Note: So, I discovered tonight I LOVE coconut milk. So glad I decided to try it.

- 1 teaspoon Barlean's coconut oil
- 30 ml of coconut milk
- 1/2 tablespoon of (crunchy) peanut butter
- 3 oz chicken
- 2 tablespoons soy sauce
- ginger powder
- tons of broccoli
- red onion

Directions: Cook chicken, broccoli and onion in coconut oil. Mix soy sauce, coconut milk and ginger. When 90 % complete, cover with mixture.
