Coconut Meringue

Note: OK, I was not expecting this HUGE meringue to be made. I basically made one of my meringues and topped it with coconut oil and coconut flakes.

- 6 egg whites
- 1 teaspoon oil
- tablespoon unsweetened shredded coconut
- equal
- pinch of cream of tartar

- Mix egg whites, desired amount of sweetener and cream of tartar. Beat with kitchen mixer until semi-stiff peaks foam. Bake in oven at 350 until desired crispiness. Top with coconut oil and flakes.
