Cheezy Zucchini Plate

Note: Not sure how this came to be. I wanted to make zucchini pancakes, and then decided to add cheese and a slice of turkey.


- 3/4 medium zucchini

- 2 egg whites

- 30 grams fat free cheddar cheese

-30 grams fat free mozzarella cheese

- slice turkey

- 1/2 red onion

Directions: Cook onions until translucent. Grate zucchini. Remove excess water with paper towel (see pic below). Stir in egg whites and zucchini. Cook on skillet. Once cooked through, remove from heat and top with cheese. Add sliced turkey on the side.
