Note: This was so good with balsamic vinegar drizzled over it.
- 1 oz fat free cheese
- 1 oz fat free feta
- 1/2 tomato, seeded (remove seeds)
- balsamic vinegar
Directions: Cut zucchini in 4. Half wise and length wise. Boil for 4-5 minutes in water. Blanch them (throw them in an ice bucket of water. This prevents them from losing their green color. Once cooled, hollow out the middle. Add pieces of tomato, fet and cheese. Drizzle with balsamic vinegar and bake at 350 for about 30 minutes.
