Zucchini Hash Browns

Note: This is a lower carb Hash Brown (made with Zucchini, instead of potatoes)

Ingredients:
-1-2 cups zucchini, grated (macros based on 2 cups)
- 1 small onion, minced
- 1/2 cup Egg Beaters, or two eggs (macros based on 2 ew)
- 3 tablespoons grated parmesan cheese (I used fat free; however, once I finish the bottle I won't use it anymore, I prefer regular)- fat free included in macros
- 1 teaspoon (or clove) garlic, minced
- 1/2 tsp salt
- 1/2 tsp pepper
- Pam cooking spray

Directions: Grate the zucchini into a colander and salt it (to remove excess moisture). Squeeze out the excess water with a paper towl, and let it sit for an hour or two. Squeeze again with a paper towel. Add the diced onion and minced garlic to the zucchini mixture in a large bowl. Add the egg beaters, salt, and parmesan cheese. Mix well. Spray your skillet with cooking spray and bring it to low heat. Place the whole batter on skillet. Cook for about 6-8 minutes. Flip the whole pancake and brown on other side.
