Sweet Potato Muffins

Note: These were ok. Nothing to write home about.

Ingredients:
-1 scoop BSN cinnamon roll
-2 egg whites
- 3 oz sweet potato (macros are based on .5 cups cubed- 70 calories- thats all spark recipes can calculate)
- stevia/splenda
- cinnamon
-1/4 tsp baking powder

Directions:
Heat sweet potato in micro for 2-3 minutes. Peel off skin. Mix all ingredients together and put in silicone muffin cups. Cook in 350 oven for 20-30 minutes. Top with sugar free jelly or sugar free syrup.
