Sweet Potato "Cheesecake"

Ingredients
- 6 oz sweet potato (macros based on 1 cup, cubed)
- 1/2 cup cottage cheese
- cinnamon, if desired
- stevia, if desired (I used one pack)

Directions:
- microwave sweet potato. take off skin. (don't throw away skins, eat them, they are good for you, haha). Cut up sweet potato in smaller chunks. Throw in blender with cottage cheese, cinnamon, stevia.
