Sugar Free Meringue Cookies

Note: This is a delicious low calorie treat.

- 6 egg whites
- 1 tsp vanilla extract
- 1 tsp cream of tartar
- 1 cup granulated splenda

Directions: Preheat oven to 300 degrees. Mix eggwhites and cream of tartar in large mixing bowl and beat on low until the eggs get lightly frothy. Add vanilla and splenda and mix on medium for one minute. Beat on high until the egg mix is thick and holds a shape. Put 1/4 cup scoops (or spoonfuls) on pam-sprayed cookie sheet. Leave about 1/2 inch between each spoonful because they will expand when they cook. Bake at 300 for about 15 minutes or until they get golden brown and crispy.
