Spinach Squares

I have seen this recipe on many websites, it is PSMF Friendly, for those of you on high protein, low fat, low carb diets.

- 2 10oz packs of frozen chopped spinach, thawed and drained well
- 1c low fat/fat free cottage cheese (macros based on fat free)
- 2 garlic cloves, minced
- salt and pepper, to taste
- 1/8 tsp ground nutmeg (optional)
- 1 tsp baking powder
- 1/2 cup egg beaters (macros based on 2 large egg whites)
- Pam

Preheat oven to 400°F. Spray a non-stick 8x8 baking pan with PAM (oil spray).In a large bowl, mix together the spinach, cottage cheese, garlic, seasonings, baking powder. (You can also blend in food processor). In a separate (glass) bowl, whip the eqq whites until soft peaks form. (egg whites do not "whip" in plastic bowls). With a spatula, gently fold the whipped egg white into the spinach mix. Pour into the prepared pan and bake 20-30 minutes.
