Shirataki Tofu Stir-fry

**Shirataki noodles are low carb noodles. I have posted a pic of them below. They can be purchased online or at certain grocery stores. I buy mine from whole foods.**


Ingredients
-package of tofu shirataki noodles
- 1/2 package tofu
-1 small can bamboo shoots (macros based on 1 cup)
-1/2 can water chestnuts (macros based on 1 cup)
-1/2 cup sliced mushrooms
-2 tablespoons reduced sodium soy sauce (can use teriyaki sauce or BBQ sauce if you are not concerned about sugar)- soy sauce included in macros
- 2 cups stir-fry vegetables (broccoli, cauliflower carrot)- included in macros
- salt and pepper to taste

(you can choose any type of veggies, if there are some you want to add or exclude from above.)

Directions:
-Rinse noodles thoroughly. Pat dry. Cover noodles with a paper towel and microwave for about two minutes to remove excess water. (whenever using these noodles, ALWAYS perform this step as it gets rid of the rubbery texture that noodles feel like when they are first removed from the package.)
- In a non-stick skillet, add noodles, tofu, veggies and sauce. When there is about a minute or two remaining, add bamboo, water chestnuts and mushrooms. Mix, so sauce is distributed over all veggies.
- Serve.
