Note: This is good as a side with meat. Today, I ate the whole thing as a meal :)
- 1/2 large eggplant
- 2 tomatoes, sliced
- 1/2 green pepper, sliced
- 1 onion, sliced
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 1 teaspoon basil
- 1-2 ounce shredded mozzarella cheese (I didn't use cheese as I can't have it due to my gum surgery) - not in macros
- 1 tablespoon fat free parmesan cheese
- salt, pepper and additional spices to taste.
Preheat oven to 450. In a mixing bowl, mix eggplant, tomatoes, onion, olive oil, garlic and basil. Make sure all veggies are coated with the oil. Lay out in baking pan that is sprayed with pam. Add shredded cheese over it. Bake for 35-45 minutes. Sprinkle with Parmesan cheese.
