"Mock Fried" Rice With Chicken

- 1 head fresh cauliflower (6-7 inch), grated
- 3 cloves garlic, minced
- 1/4 cup soy sauce (reduced sodium)
- 3 egg whites beaten
- 3 green onions, chopped (I used regular onion)
- 2 stalks celery
- 1/2 green pepper, minced
- 6 oz chicken, cooked

In large non-stick skillet on medium to medium-high, cook onions, celery and pepper. Add the cauliflower and garlic; stir-fry until the cauliflower is nearly tender, but not mushy. Stir in the soy sauce. Push the cauliflower to one side of the pan; pour in the egg whites. Lightly scramble the egg briefly then mix into the cauliflower. Add cooked chicken Freezing not recommended.
