Green Pepper, Onion and Tomato Omelette

Ingredients:
- 5-6 egg whites (macros based on 5)
- small onion, sliced
- 1/2 small green pepper, sliced
- small tomato, cut into small chuncks
- 1/2 cup fat free shredded cheese
- optional toppings/spices: salt, pepper, salsa, hot sauce, cayenne pepper

Directions:
- stir-fry onions for about a minute in a non-stick pan. Add green peppers, and then tomatoes. Add spices (salt, pepper). In a separate skillet, cook egg whites (don't scramble, but make like a pancake.) Add cheese on one side of the egg whites. Fill the other side with cooked veggies and fold flat. Top with salsa or hot sauce.
