- 2 eggs, large
- 1 tablespoon flaxseed meal
- 1/4 cup low fat or fat free cottage cheese
- 1/4 teaspoon baking soda
Beat eggs in a small mixing bowl until well blended. Mix in rest of ingredients until you reach an even mixture. On a non-stick skilled coated with cooking spray, pour batter onto pan, and cook on medium-high heat. Can be topped with PB, cheese, nuts, seeds, etc!
